Review & Giveaway of Canning & Preserving by Ashley English

When I opened the book Canning & Preserving by Ashley English from Lark Books I knew I was in for a treat. This book was made well; in the writing, pictures, and the quality of the book itself. For this visual learner I greatly enjoyed the refresher course in this book. There is a complete explanation of the science of canning, chemistry, acidity, and altitude; knowledge which I sorely lacked in. This makes me more confident to head into more varied home canning and not fear I will poison my husband. I want him around for a good long time!

There are charts throughout the book about food safety (fruits/veggies with high and low pesticide traces), seasonality of ingredients, pectin, ideas for gift baskets, and definitions of everything from jam to curd.

For those beginner’s and seasoned pro’s you can’t do without the step by step instructions and photos for boiling water bath processing and pressure canning. Ms. English has a thorough overview of all the steps from cleaning the jars, lids, and screw bands, heating the jars, prepping the lids, checking head space, processing the jars, cooling and checking the seals, reprocessing if needed, and storing. If your unsure of yourself in home canning this section alone would be worth the price of the book.

Sprinkled throughout the book are profiles of seasoned canners who share their canning background and give tidbits of canning wisdom. I thought this was a brilliant idea. Two other awesome ideas are hosting a at-home canning party and setting up a canning swap. For those who you who have friends, family, or neighbors who preserve food or are interested in learning how this would be fun.

Most of the recipes do seem to be the standard line of food preservation. If you’re looking for some really different or interesting canning recipes this may not suite your taste in the recipe department. Despite this, I would highly recommend this book as a canning reference book that needs to be read and used in canning season.
